Cranberry Salad: Our Favorite Recipes and Traditions

Let's be honest here, people don't typically get excited over cranberry relish, sauce, salad, etc.  THIS recipe, however, may redeem the nutrient-packed berry to its rightful place on your dinner table.  Cranberries are a great addition to your holiday meals due to its excellent nutritional values.  With the addition of the other ingredients in this salad, you are getting a big boost of vitamin C, antioxidants, and fiber just for starters.  Our immune systems could certainly use the extra lift during the holidays!
This is another recipe which has been in my family for years and on my dinner table at home every year at the holidays.  It's on the table for every Thanksgiving and Christmas dinner, and it NEVER makes it to the trash.  It's that good.

DELICIOUS HOLIDAY CRANBERRY SALAD
Serves 10-15
2 8oz Bags Fresh Cranberries
2 Fresh Oranges 
1 Fresh Grapefruit
2 Granny Smith Apples
2-3 Red Apples (Whatever your preference.  It should, however, be of a crisp variety.)
Juice of 1/2 fresh lemon
Juice of 1/2 fresh lime
1 c. Sugar (or other sweetener of your choice)
Pinch of Salt
DIRECTIONS:  Peel oranges and grapefruit.  Combine cranberries, oranges, grapefruit, and apples in food processor (or blender - I use my Cuisinart® Mini-Prep Plus to chop everything and then stir it together in a bowl.)  Add juice of lemon & lime, sugar, and salt.  Stir together.  I always make this a day ahead because it tastes even better after it has chilled in the refrigerator for a day.  
The best part about this recipe is that you can't really mess it up.  Sometimes I add an extra orange, a little more sugar, or even celery and/or pecans!  Play with it and make it your own.
