Holiday Cheer Week 3 – Mom
I have the best personal family and office family and this has
been an especially hard holiday season for both. Besides our mother, Cheri
Clampitt, the other Broker/Agent in the office, lost her mother as
well. So this week is dedicated to
Cheri’s mom. I am posting one of Cheri’s
favorite holiday
recipes that her mother used to make for her. It was so thoughtful of her to share this with
us and I can’t wait to try it. Thank you Cheri!
Mom’s Frozen Date Roll
1 lb graham crackers
1 lb chopped dates
1 pt heavy cream
1 cup chopped nuts
1 lb little marshmallows
1 can crushed pineapple drained
Crush graham crackers to a fine consistency. Add nuts, dates, marshmallows and
pineapple. Moisten with the heavy cream. Pack or roll into cylinder shape and put in
refrigerator or freezer until solid.
After it becomes solid, slice in ½ to 1 inch slices and serve. This recipe can be made without the pineapple
if desired or you can also add coconut.
Cheri tells me that this has been a holiday favorite (or
just a favorite…it can be made anytime of the year and be just as good! J) I am excited to see if this will become a
favorite at our house too!
