Easy KitchenAid Rolls: Our Favorite Recipes and Traditions

Christmas will be here in exactly TWO weeks!  If you celebrate Christmas, do you have your tree up?  At our house we have a tradition of waiting until December 21st to put up our tree.  The reason is that our sweet grand-baby, Jordyn, has a birthday on the 21st.  We have everyone over to the house that day to decorate the tree and celebrate little Jordyn's birthday.  I can't think of a better way to get a tree decorated!

In keeping with the spirit of family, this week, I'd like to share one of my sister's recipes.  If you have a KitchenAid® and a love affair with carbs, this is the recipe for you!  These rolls are simply DIVINE.  And so, so easy!

Holly's KitchenAid® Rolls

Yields about 4 dozen rolls.  (So feel free to cut this recipe in half if needed.)
6 C. Flour
3 eggs
2 Tsp. Salt
2 Tbl. Yeast
3/4 C. Sugar
1 Stick Butter (1/2 cup)
2 1/4 C. Milk
Mix first 5 ingredients in mixer while microwaving milk and butter together in microwave for 5 minutes.  Slowly add milk/butter mixture to bowl while mixing.  Once mixed, knead for 10 minutes (with knead attachment - still in KitchenAid® mixer).  Let rise.  Once risen, punch down and shape into rolls*, place in greased (with shortening or butter) 9x13 pan or jelly roll pan, and then let rise a second time.  Bake 10 minutes at 400ºF or until golden.  Immediately butter tops.
*Coat hands with shortening for this process.  You will have to reapply shortening to your hands several times.  If you don't, the dough will end up sticking to your hands.
